Hey wine lovers! The next Swirl wine dinner on January 14, 2020 will transport us to “Big Bold Bordeaux” – the largest wine producing area of France. It is famous for the “Bordeaux Blend” of both red and white wines.
For red wines, the region produces mainly Cabernet Sauvignon, Cabernet Franc, Merlot, and Malbec grapes, along with Semillon, Sauvignon Blanc and Sauternes for whites. The juice of these grapes is blended to produce the flavors recognized as Bordeaux. In the red blends, the Cabernet Sauvignon gives the backbone and tannic structure, the Merlot the flesh and juicy flavor, and the Cabernet Franc the aromatics. For the white wines the acidity and freshness comes from the Sauvignon Blanc, while Semillon makes the blends rich.
The Bordeaux region in southwest France is bounded by the Atlantic Ocean on the west, and bisected by two rivers, the Dordogne in the north and the Garonne in the south. These features not only define the wine climates, but give the region its bounty of seafood, great produce, and beef, which are naturally prepared with the wines of the area.
